Dinner Made Easy: Taco Tuesday for the Win
Most people I know get overwhelmed with meal planning and give up and just go through the drive thru.
One of my favorite meal planning tips is to create a theme for each night.
This reduces the number of possible recipes to chose from and cuts the “analysis paralysis”.
So for Tuesdays I use the Taco Tuesday (but not on a Friday…did you see The Lego Movie? Sorry I spend too much time with kids!)
This theme helps me to focus on Mexican food for Tuesday nights. I have 4–5 recipes right now that I cycle through each week that I know my kids will eat (-ish).
This Chicken Fajita Wrap recipe can be made a million different ways. You could do regular tortillas instead of lettuce wraps or you could put the chicken on top of tortilla chips for chicken fajita nachos.
The real secret to this being a quick and easy recipe is that I used a pre-cooked rotisserie chicken from the grocery store!
